Recipe: Mocha Circles Cookies (makes 28 cookie sandwiches)
Ingredients:
Dough:
- 1 1/3 Cups of All-purpose flour
- 3/4 C Powdered Sugar
- 10 Tbs of Unsalted Butter (softened)
- 1/2 Cup of grounded Nuts (of your choice: Walnuts, Almonds or Hazelnuts))
- 4 Tbs of finely grounded Coffee
Also:
- Mocha Butter Filling (recipe below)
- Mocha Glaze (recipe below)
- Chocolate drizzle (optional)
- Rolling pin (optional: with a spacer – see bellow)
- Coolie cutter (circle)
- 2 Cookie Sheets
- Parchment Paper, or Oil Spray to prevent sticking
Instructions:
- In a bowl, whisk together the flour, coffee and nuts. Set aside.
- Line 2 Cookie sheets with a Parchment Paper, or lightly grease them. Set aside.
- In another bowl, cream together the softened butter and sugar until light and fluffy, using hand held electric mixer.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Roll the dough into 1/4 inch thickness with a rolling pin (I highly recommend to use spacer for your rolling pin – it assures even dough thickness and even baking. It was a “gamechanger” for me). I like to roll cookie dough between 2 sheets of Parchment paper – it eliminates the need for flouring the surface to prevent sticking, and the cookies look better without flour dusting on them.
- Cut out circles with a cookie cutter, and carefully place them on a baking sheet 2 inches apart.
- Bake at 360°F (175°C) for 7-8 minutes. Let them cool completely on cooling rack.
- Once cooled, sandwich the Mocha Circle cookies together with a layer of Mocha Butter Filling.
- Prepare the Mocha Glaze and carefully spread it with a spoon over the top of each cookie.
- Let the glaze completely dry.
- Optionally, add a chocolate drizzle for an extra touch of decadence.
Mocha Butter Filling:
- 5 Tbs of Unsalted Butter (softened)
- 3/4 Cup of Powdered Sugar
- 1 tsp of finely grounded Coffee powder
- 1/4 tsp of cold brewed Coffee
Mix all the ingredients until smooth and creamy.
Mocha Glaze:
- 3/4 Cup of Powdered Sugar
- 1 Tbs of strong brewed Coffee
- 1 pinch of finely grounded Coffee powder
Combine the ingredients until you achieve a smooth glaze consistency.
Chocolate drizzle (optional):
- 1/4 Cup of Chocolate Chips
- 1 Tbs of Unsalted Butter
Slowly melt together until you achieve a smooth consistency, drizzle / decorate over dry glaze.
