Recipe: Berry and Cream Cheese Filled Egg Bites (12 pieces)

Ingredients:

  • 10 eggs
  • 4 oz cream cheese (½ block)
  • ¼ cup milk (divided)
  • Zest from 1 lemon
  • 4 Tbsp Stevia
  • 1 tsp vanilla extract
  • 2 Tbsp each dried raisins, cherries, or currants (optional)
  • 2 Tbsp each chopped nuts (walnuts or almonds, optional)
  • Berries (fresh or frozen)
  • Non-stick cooking spray

Instructions:

  1. Heat oven to 375°F (190°C) and spray a muffin pan with non-stick spray.
  2. In a bowl, mix cream cheese with 2 Tbsp milk until smooth. Stir in lemon zest, Stevia, vanilla extract, and dried fruit/nuts if using.
  3. Divide the cream cheese mixture evenly into 12 muffin cups. Add a few berries on top.
  4. Whisk eggs with the remaining 2 Tbsp milk, then pour over the cream cheese and berries.
  5. Bake for 20–25 minutes, or until golden brown. The bites will puff up while baking but settle as they cool.
