Recipe for Cranberry Oat Bars:
🧺 Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ cups old-fashioned oats
- ¾ cup brown sugar, packed
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3/4 cup (1 1/2 stick) unsalted butter, melted
- 1 ½ to 2 cups cranberry sauce (use my homemade recipe)
- Optional: ½ teaspoon cinnamon or orange zest for extra flavor
- Large bowl
- Baking pan 8×8-inch (for ticker bars), or 9X9-inch (for thinner bars)
- Spoon
- Knife
- Cutting board
👩🍳 Instructions
- In a large bowl, combine flour, oats, brown sugar, baking soda, and salt.
- Preheat oven to 375°F (190°C). Line an 8×8-inch (or 9X9-inch) baking pan with parchment paper, leaving a little overhang for easy removal.
- Pour in melted butter and stir until the mixture is evenly moistened and crumbly.
- Press about two-thirds of the oat mixture into the bottom of the prepared pan to form the crust.
- Spread cranberry sauce evenly over the crust.
- Sprinkle remaining oat mixture over the top, pressing down lightly.
- Bake for 30–35 minutes, or until the top is lightly golden brown.
- Cool completely before cutting into bars. (They’ll firm up as they cool.)
🍊 Tips & Variations
- Add a touch of orange zest or a sprinkle of cinnamon for a warm, holiday flavor twist.
- Use any leftover fruit preserve or jam if you don’t have enough cranberry sauce — raspberry or cherry blend beautifully!
- These bars freeze well — wrap tightly and store up to 3 months.
