Irresistibly Cute Mushroom Cookies Recipe: A Delight for Your Taste Buds

Today, we’re crafting Mushroom Cookies with Nutella filling – small, mushroom-shaped bites that not only captivate the eyes but also leave your taste buds craving for more. Recipe (42 cookies):

Ingredients:

  • 1 Cup (2 sticks) of Unsalted Butter
  • 1 Cup of granulated Sugar
  • 1 large Egg
  • 1 tsp of Vanilla Extract
  • 2 2/3 Cups of All-purpose Flour
  • 1/2 tsp of Baking powder
  • 1/8 tsp of Salt
  • 4 Tbs of Cocoa Powder
  • Nutella for filling (or your favorite chocolate buttercream filling)
  • 1/2 Cup of Chocolate Chips (melted with 2 Tbs of Unsalted Butter- for decoration)
  • 1/4 cup of ground Nuts (for topping)

Instructions:

  • Heat oven to 350F.
  • Line cookie sheets with Parchment paper, or very lightly spray with Cooking Oil, set aside.
  • In a bowl beat together butter and sugar until light and fluffy (5 min) using a hand held mixer, or standing mixer.
  • Add egg and Vanilla Extract, beat together.

  • In another bowl combine the dry ingredients: flour, baking powder, salt and cocoa powder.
  • Mix dry ingredients with butter mixture, make a dough.

  • Break dough into 2 sections,.
  • Roll the dough into 1/4 inch thickness between 2 Parchment papers using a Rolling Pin. I highly recommend using a rolling pin with a spacer – it will make your job much easier and for me it was a “game changer”. Your cookies will have even thickness and will bake evenly. Rolling chocolate dough between parchment paper eliminates the need to use flour to prevent sticking – this way the dough surface stays chocolaty and dark, and your bite-sized treats will look great.
  • Use cookie cutter to cut-out mushroom shapes.

  • Carefully transfer Mushroom cookies onto the cookie sheet, spacing them 1 inch apart.
  • Bake 8 min, or until done.
  • Cool Mushroom cookies slightly and gently transfer on cooling rack (don’t wait too long, otherwise they will continue brown on the bottom).
  • When completely cooled, spread a thin layer of Nutella (or your favorite chocolate filling) on the bottom of cookie.

  • Cover with the upper cookie, wiping any “squished out” filling on the sides with a knife.
  • Melt Chocolate Chips with Butter. Using a spoon, carefully spread Chocolate on the top cookie. Decorate with grounded nuts.
  • Let chocolate completely set before transferring.
