For me, one of those meals will always be boiled potatoes layered with raw sauerkraut and topped with crispy bacon. It’s as simple as cooking can get, yet surprisingly balanced, wholesome, and absolutely delicious. And yes — you must serve it with a glass of cold milk. That’s part of the magic.

Ingredients – 4 servings:
- 3 lb. Potatoes (follow my recipe here).
- Raw, unpasteurized Sauerkraut
- Bacon (8 slices) crisp

- Milk, for serving
Instructions
- Boil the potatoes
Peel and cube the potatoes. Cook them in a small pot in salted water until soft and tender. - Prepare the bacon
Slice or chop the bacon and pan-fry until beautifully crisp. Set aside. - Assemble the dish
On a plate, layer the warm, drained potatoes.
Top generously with raw sauerkraut — do not heat it.
Sprinkle the crispy bacon over the top. - Serve immediately
Best enjoyed with a tall glass of cold milk.
