Ingredients

  • 2 large sweet potatoes, peeled and cut into chunks
  • 3 medium beets, peeled and cut into chunks
  • 1–2 onions (yellow or red), cut into wedges
  • 2–3 Tbsp olive oil
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat oven to 400°F (200°C).
    Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the vegetables.
    Peel and cube the sweet potatoes and beets. Cut the onions into wedges or thick slices.
  3. Season everything.
    Place the vegetables in a large bowl. Add salt, pepper, garlic powder, onion powder, and olive oil. Toss until evenly coated.
  4. Roast to perfection.
    Spread the vegetables on the baking sheet in a single layer.
    Roast for 35–45 minutes, flipping halfway, until tender and caramelized.
  5. Serve warm.
    This dish is delicious right out of the oven and reheats beautifully.
