Ingredients
- 2 large sweet potatoes, peeled and cut into chunks
- 3 medium beets, peeled and cut into chunks
- 1–2 onions (yellow or red), cut into wedges
- 2–3 Tbsp olive oil
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper for easy cleanup. - Prepare the vegetables.
Peel and cube the sweet potatoes and beets. Cut the onions into wedges or thick slices. - Season everything.
Place the vegetables in a large bowl. Add salt, pepper, garlic powder, onion powder, and olive oil. Toss until evenly coated. - Roast to perfection.
Spread the vegetables on the baking sheet in a single layer.
Roast for 35–45 minutes, flipping halfway, until tender and caramelized. - Serve warm.
This dish is delicious right out of the oven and reheats beautifully.
