🥔 Ingredients
Mashed Potatoes
- 3 lbs. Yukon Gold potatoes, peeled and cut into chunks
- 6 cloves garlic, whole , peeled
- 1 tablespoon salt (for boiling water)
- 4 tablespoons butter
- ½ cup milk or half-and-half (more as needed)
- ½ cup pumpkin purée
- ½ teaspoon of my Pumpkin Pie spice mix (just enough to deepen the pumpkin flavor)
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
Flavor Enhancers
- 2–3 tablespoons grated Parmesan (optional but recommended)
- 1 teaspoon roasted garlic paste or an extra clove mashed in
- 1 tablespoon fresh herbs (sage, thyme, or chives), finely chopped
- Butter for serving
🧄 Instructions
1. Cook the Potatoes
Peel potatoes and cube them. Place potatoes and whole garlic cloves into a large pot. Cover with cold water and add 1 tablespoon of salt.
Bring to a boil and cook until potatoes are fork-tender, about 15–20 minutes.
2. Drain & Dry
Drain the potatoes well, then return them to the warm pot for 2–3 minutes to evaporate excess moisture.
3. Mash
Add butter and mash until smooth. Stir in the pumpkin purée.
4. Add Flavor
Pour in milk (start with ½ cup), seasoning with salt, pepper, and my Pumpkin Pie spice mix.
Add roasted garlic paste (or mash in the softened garlic from the pot).
Mix until creamy and fluffy.
5. Finish with Herbs & Parmesan
Fold in fresh herbs and Parmesan if using. Adjust consistency with more milk as needed.
6. Serve Warm
Top with a pat of melted butter, cracked pepper, and optional herbs.
