Ingredients

  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 1 tbsp fresh ginger, grated
  • 1 lb. carrots, peeled and sliced
  • 4 cups vegetable or chicken broth

Instructions

  4. Blend:
    Blend soup until smooth using an immersion blender or countertop blender.
  5. Finish:
    Stir in coconut milk or cream, if using. Taste and adjust seasoning.
