Traditional Masala Chai (Indian Spiced Tea) + Chai Concentrate Recipe

Masala Chai in the cup.
Masala Chai

There is something deeply comforting about a steaming cup of traditional Masala Chai. Simmered slowly with fragrant spices, black tea, milk, and just a touch of sweetness, this classic Indian tea is warming, soothing, and wonderfully aromatic. Perfect for chilly mornings, quiet afternoons, or cozy evenings, Masala Chai turns a simple cup of tea into a comforting ritual.

Unlike quick chai mixes, this traditional method allows the spices to gently infuse, creating rich flavor and depth in every sip. Once you try it this way, you may never go back.

Ingredients

  • 2 cups water
  • 2 cups milk (whole milk preferred; see variations)
  • 2 teaspoons loose black tea or 2 black tea bags (Assam or Darjeeling work beautifully)
  • 2–3 tablespoons sugar or honey, to taste

Whole spices:

  • 2 green cardamom pods, lightly crushed
  • 1 small cinnamon stick
  • 3–4 whole cloves
  • 4–5 black peppercorns
  • 1-inch piece fresh ginger, sliced or lightly crushed

Instructions

  1. In a saucepan, combine the water, ginger, and all whole spices.
  2. Bring to a gentle boil, then reduce heat and simmer for 5–7 minutes to allow the spices to release their flavor.
  3. Add the black tea and simmer for 1–2 minutes.
  4. Pour in the milk and return to a gentle simmer. Do not boil vigorously.
  5. Add sugar or honey to taste and simmer for another 2–3 minutes.
  6. Strain the chai into mugs and serve hot.

Tips for the Best Chai

  • Lightly crushing the spices helps release their oils and flavor.
  • Simmer gently — boiling too hard can make the tea bitter.
  • Adjust sweetness at the end so you don’t overpower the spices.

Variations

  • Dairy-Free: Use almond, oat, or coconut milk.
  • Stronger Chai: Add an extra teaspoon of tea or simmer 1 minute longer.
  • Less Sweet: Skip sugar entirely and sweeten each cup individually.
  • Caffeine-Free: Substitute black tea with rooibos tea.

Storage & Reheating

  • Store leftover chai in the refrigerator for up to 2 days.
  • Reheat gently on the stovetop or in the microwave.
  • Stir well before serving, as spices may settle.

Frequently Asked Questions

Can I use ground spices instead of whole spices?
Yes, but whole spices provide a cleaner flavor. If using ground spices, add a small pinch of each and strain carefully.

What tea is best for Masala Chai?
Strong black teas like Assam or Darjeeling are traditional and hold up well to milk and spices.

Is chai always sweet?
Traditionally, yes — but sweetness is easily adjustable to personal taste.

Chai Concentrate (Make-Ahead & Freezer-Friendly)

Chai Concentrate is perfect for busy mornings or entertaining. This strong, spiced base can be stored in the refrigerator and quickly turned into chai or chai lattes by simply adding hot milk.

It’s a fantastic time-saver and a wonderful gift idea for tea lovers.
