How to make Window Christmas Cookies (48 cookie sandwiches)
Ingredients:
- 1 Cup (2sticks) of Butter (softened)
- 1 Cup of Sugar (granulated)
- 1 Large Egg
- 1 tsp of Vanilla Extract
- 2 2/3 Cups of All-purpose Flour
- 1/2 tsp of Baking Powder
- 1/8 tsp of salt
- Jelly (Red – such as Raspberry or Red Currant)
- Powdered Sugar (for dusting)
- Hand Mixer
- Rolling pin (with Spacer – see bellow)
- Cookie Cutters (one solid, one with a window)
- Parchment paper or Cooking Oil spray
- 2 Cookie sheets
- Fine mesh strainer
Directions:
Make the dough:
- Heat oven to 350F.
- Line cookie sheet with Parchment paper, or very lightly spray with Cooking Oil, set aside.
- In a bowl beat together butter and sugar until light and fluffy (5 min) using a hand held mixer or standing mixer.
- Add egg and Vanilla Extract, beat together.
- In another bowl combine the dry ingredients: flour, baking powder and salt.
- Mix dry ingredients with butter mixture, make a dough.
Shape the Cookies:
- Break dough into 2 sections,.
- Lightly sprinkle surface with flour and roll dough into 1/4 inch thickness using a Rolling Pin. I highly recommend using a rolling pin with a spacer – it will make your job much easier and for me it was a “game changer”. Your cookies will have even thickness and will bake evenly. (I purchased mine after the photo was taken.)
- Use Christmas cookies cutters to cut-out shapes. Make sure you have same number of solid cutouts (for the bottom of your cookie sandwich) and cutouts with window (for the top of your cookie sandwich).
Bake and Assemble the Cookies:
- Carefully transfer Christmas cookies onto the cookie sheet, spacing them 2 inches apart.
- Bake 8 min, or until lightly / pale brown on the bottom.
- Cool cookies slightly and gently transfer on cooling rack (don’t wait too long, otherwise they will continue brown on the bottom).
- When completely cooled, spread a thin layer of jelly on the bottom (solid) cookie, leaving slightly ticker layer in the middle.
Decorate the Cookies:
- Cover with the upper cookie, wiping any jelly that “squished out” on the sides with a knife.
- Sprinkle with powdered sugar, using fine mesh strainer.
- All done. Great job!
- Serve and Enjoy.
These cookies are very fragile when you first take them out of the oven. If you break them, don’t feel bad. In our family we save all broken or miss-shaped cookies and use them to make Rum Balls.
