A Simple, Nourishing Meal from My Childhood

There are meals that feel like home — the kind of food that fills you up, comforts your spirit, and brings you right back to the kitchen you grew up in. For me, one of those meals will always be boiled potatoes layered with raw sauerkraut and topped with crispy bacon. It’s as simple as cooking can get, yet surprisingly balanced, wholesome, and absolutely delicious. And yes — you must serve it with a glass of cold milk. That’s part of the magic.

This meal is a beautiful example of how basic, honest ingredients can nourish both the body and the soul.

Why This Simple Meal Works So Well

Despite having just a few ingredients, this dish offers a lovely balance:

Boiled Potatoes

Soft, warm, and comforting. Potatoes provide slow-digesting carbohydrates, natural potassium, and fiber. They make the perfect foundation for the tangy sauerkraut.

Raw Sauerkraut (Never Cook It!)

This is where the wisdom of traditional kitchens shines.
Raw, unpasteurized sauerkraut is alive — filled with probiotics that support gut health, digestion, and even the immune system. Heat destroys the beneficial bacteria, so keeping the sauerkraut raw preserves all that natural goodness. Layering it right over the warm potatoes softens it just slightly without harming the probiotics.

Crispy Bacon

A little bit goes a long way. Savory, smoky, and rich, the bacon adds the perfect salty contrast to the mild potatoes and tangy kraut. It turns a humble plate into something crave-worthy.

Cold Milk on the Side

This is more than a pairing — it’s tradition. The creaminess of cold milk balances the acidity of the sauerkraut and the warmth of the potatoes. It ties everything together into a complete, comforting meal.

Ingredients – 4 servings:

  • 3 lb. Potatoes (follow my recipe here).
  • Raw, unpasteurized Sauerkraut
  • Bacon (8 slices) crisp
  • Salt (optional)
  • Milk, for serving

Instructions

  1. Boil the potatoes
Peel and cube the potatoes. Cook them in a small pot in salted water until soft and tender.
  2. Prepare the bacon
Slice or chop the bacon and pan-fry until beautifully crisp. Set aside.
  3. Assemble the dish
On a plate, layer the warm, drained potatoes.
Top generously with raw sauerkraut — do not heat it.
Sprinkle the crispy bacon over the top.
  4. Serve immediately
Best enjoyed with a tall glass of cold milk.

The Wisdom of Balance

Meals like this remind us that a balanced diet doesn’t have to be complicated. This humble recipe combines:

  • Carbohydrates for energy
  • Beneficial probiotics for digestive health
  • Healthy fats and protein from bacon
  • Nutrient diversity from whole, minimally processed foods

It’s comfort food, yes — but also nourishment in its simplest, most traditional form.

Final Thoughts

This meal is proof that delicious dishes don’t require long ingredient lists or fancy techniques. Sometimes the best meals are the ones passed through generations, made from what was available, and remembered for the way they made us feel.
