If you’re looking for a festive appetizer that’s effortless yet stunning, these Cranberry Goat Cheese Crostini are guaranteed to impress. Crispy toasted baguette slices are topped with creamy goat cheese, a spoonful of sweet-tart cranberry sauce, a sprinkle of crunchy pistachios, and fresh thyme. Every bite is a perfect contrast of textures and flavors — creamy, crisp, sweet, tart, nutty, and herbaceous.

They’re beautiful enough for holiday gatherings but simple enough for everyday snacking. And the best part? They take only minutes to assemble, especially if you already have leftover cranberry sauce on hand!

Ingredients (makes about 20 crostini)

  • 1 baguette, sliced into ½-inch pieces
  • 2–3 tablespoons olive oil
  • 8 oz creamy goat cheese (room temperature)
  • 1 cup cranberry sauce (try my very good homemade recipe)
  • ⅓ cup pistachios, roughly chopped
  • Fresh thyme leaves
  • Salt & pepper to taste

Instructions

1. Toast the Crostini

  1. Preheat your oven to 400°F (200°C).
  2. Arrange 1/4 inch baguette slices on a baking sheet and brush lightly with olive oil.
  3. Bake for 7–9 minutes, or until golden and crisp around the edges. Let cool slightly, transfer on wire cooling rack.

2. Assemble

  1. Spread each toasted slice generously with goat cheese.
  2. Add a spoonful of cranberry sauce over the cheese.
  3. Sprinkle with chopped pistachios.
  4. Finish with fresh thyme leaves, a tiny pinch of salt, and freshly cracked pepper.
