Bright, Tangy, and Irresistibly Festive

These Cranberry Lemon Bars are a joyful twist on a classic favorite — combining the zesty freshness of lemon with the vibrant tartness of cranberries. The buttery shortbread crust perfectly complements the smooth, tangy lemon filling and a layer of sweet-tart cranberry sauce. Together, they create a dessert that’s as stunning to look at as it is delicious to eat. Whether you’re using leftover cranberry sauce or making a batch from scratch, these bars are the perfect way to celebrate the bright flavors of the season!

Ingredients for the Cranberry Lemon Bars:

Crust:

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ tsp salt

Lemon filling:

  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • ½ cup freshly squeezed lemon juice (about 2 lemons)
  • 1 Tbsp lemon zest

Cranberry layer:

  • 2 cups cranberry sauce (smooth or slightly chunky) – make a layer, or add a swirl.

Optional garnish:

  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. Make the crust: In a bowl, cream together the butter and sugar until light and fluffy using an electric mixer. Add the flour and salt, mixing until crumbly. Press the dough evenly into the bottom of the prepared pan.
  3. Bake the crust for 15–18 minutes, or until lightly golden around the edges.
  4. Add cranberry layer: Gently spread the cranberry sauce over the warm crust.
  5. Make the lemon filling: In another bowl, whisk together the sugar, flour, eggs, lemon juice, and zest until smooth. Pour the lemon mixture evenly over the cranberry layer. (For the “swirl” – “dot” the lemon layer with cranberry sauce and carefully swirl with a tooth pick, making sure not to disturb the crust!).
  6. Bake again for 25–30 minutes, or until the center is set and the top looks slightly glossy.
  7. Cool completely before lifting out of the pan. Dust with powdered sugar before slicing into bars. Slice using a wet knife to prevent sticking.
