Deep, dark, and irresistibly moist, this Guinness Chocolate Sheet Cake is packed with rich cocoa flavor and enhanced by the bold depth of stout beer. Topped with a silky Guinness cream cheese frosting, this cake is the ultimate Irish-inspired dessert — perfect for St. Patrick’s Day or any chocolate lover’s celebration.

Why You’ll Love This Cake 🍺🍫

  • Incredibly moist texture
  • Deep, complex chocolate flavor
  • Not “beer-y” — just rich and balanced
  • Easy sheet cake (no stacking layers!)
  • Perfect for feeding a crowd
  • Stunning dark color with creamy frosting contrast

Does Guinness Really Work in Cake?

Yes — and beautifully.

Guinness:

  • Enhances cocoa flavor
  • Adds moisture
  • Balances sweetness
  • Creates depth

It does not taste like beer. It simply makes the chocolate richer and more sophisticated.

Ingredients

For the Cake

  • 1 cup Guinness stout
  • ½ cup unsalted butter
  • ½ cup vegetable oil
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt

For the Guinness Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • 2–3 tablespoons Guinness reduction (see below)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Important: Reduce the Guinness for the Frosting

Pour about ½ cup Guinness into a small saucepan.
Simmer gently for 8–10 minutes until reduced to about 3 tablespoons.

Cool completely before adding to frosting.

This keeps the frosting flavorful without being watery.

Instructions

Step 1: Prepare the Pan

Preheat oven to 350°F.
Grease a 9×13-inch baking pan and line with parchment if desired.

Step 2: Make the Chocolate Base

In a saucepan over medium heat, combine:

  • Guinness
  • Butter
  • Oil
  • Cocoa powder

Whisk until melted and smooth. Remove from heat and let cool slightly.

Step 3: Mix Wet Ingredients

In a large bowl, whisk together:

  • Sugar
  • Eggs
  • Sour cream
  • Vanilla

Slowly pour in the cooled chocolate mixture and whisk until combined.

Step 4: Add Dry Ingredients

In a separate bowl, whisk together:

  • Flour
  • Baking soda
  • Salt

Gradually add to the wet ingredients and mix just until combined. Do not overmix.

Step 5: Bake

Pour batter into prepared pan.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Cool completely before frosting.

Make the Guinness Cream Cheese Frosting

Beat cream cheese and butter until smooth and fluffy (2–3 minutes).

Add powdered sugar gradually. Mix until smooth.

Add:

  • 2 tablespoons cooled Guinness reduction
  • Vanilla
  • Pinch of salt

Beat until creamy and silky. Adjust with more reduction if desired.

Spread over completely cooled cake.
