  • 1 lb. (450 g) smoked sausage or kielbasa, sliced into 1-inch pieces
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, peeled and cut into chunks
  • 4 cups chopped cabbage (about 1 small head)
  • 4 cups chicken or vegetable broth
  • 1 tsp smoked paprika
  • ½ tsp dried thyme

Instructions

  1. Brown the sausage:
    In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage slices and cook until lightly browned. Remove and set aside.

    In the same pot, add onion and cook until softened, about 5 minutes. Add garlic and cook for another 30 seconds.
  3. Add vegetables and seasonings:
    Stir in potatoes, cabbage, smoked paprika, thyme, salt, and pepper. Cook for 2–3 minutes, letting the spices bloom.
  4. Simmer the stew:
    Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 25–30 minutes, until potatoes and cabbage are tender.
  5. Combine & finish:
    Return sausage to the pot and cook for another 5 minutes to heat through. Adjust seasoning if needed.
  6. Serve:
    Ladle into bowls and garnish with fresh parsley. Serve hot with crusty bread or dumplings if desired.
