Homemade Pumpkin Gnocchi:
- 1 cup pumpkin purée
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup grated Parmesan
- 1 ¼–1 ½ cups all-purpose flour (add more only if needed)
Skillet Sauce:
- 4 tbsp butter
- 2 cloves garlic, minced
- 6–8 fresh sage leaves
- 1/3 cup grated Parmesan (plus more for serving)
- Salt and pepper to taste
- Optional: crushed red pepper flakes
- Optional: toasted walnuts or pine nuts for garnish

Make the Pumpkin Gnocchi:
- Mix the dough:
In a bowl, stir together pumpkin purée, egg, salt, pepper, garlic powder, and Parmesan. Add flour gradually until a soft dough forms. It should be slightly sticky but workable—don’t add too much flour or the gnocchi will become dense. - Shape the gnocchi:
Turn the dough onto a floured surface. Divide into 4 pieces. Roll each piece into long ropes about ¾-inch thick. Cut into 1-inch pillow shapes.
Optional: Press each piece gently with a fork for ridges. - Boil:
Bring a pot of salted water to a boil. Add gnocchi and cook until they float (2–3 minutes). Scoop out and set aside.
Make the Skillet Sauce:
- In a large skillet, melt butter over medium heat. Add sage leaves and cook until the butter begins to brown lightly and the sage becomes crispy.
- Add minced garlic and cook 30 seconds.
- Add boiled gnocchi directly to the skillet. Toss to coat in the browned butter.
- Stir in Parmesan. Season with salt, pepper, and red pepper flakes if using.
- Serve warm with extra Parmesan and toasted nuts.
