Ham and Cream Cheese Stuffed Egg Bites

If you’re looking for a protein-packed breakfast or snack that’s both comforting and delicious, you’re going to fall in love with these Ham and Cream Cheese Stuffed Egg Bites. They’ve been a go-to in my kitchen for years, and every time I make them, they disappear in no time. Fluffy eggs, smooth cream cheese, and flavorful ham come together in the most irresistible bite-sized form.
One of my favorite things about these egg bites is how versatile they are. While ham is the classic filling, sometimes I sneak in a little pepperoni or salami for a fun flavor twist. Think of them as tiny, handheld breakfast hugs—you can enjoy them fresh out of the oven, or keep them in the fridge for a quick grab-and-go option during the week.
They’re wonderfully simple to make: whisked eggs baked in muffin tins, a little dollop of cream cheese tucked inside, and savory ham to balance it all out. The cream cheese melts into the eggs, creating a creamy pocket of joy that pairs so well with the salty, savory ham. It’s a combo that never gets old.
Whether you’re preparing breakfast for your family, need an afternoon snack, or want something filling for your lunchbox, these egg bites are perfect. Bonus—they’re gluten-free and packed with protein, so you’ll feel good about eating them, too.

🥚 Ham and Cream Cheese Stuffed Egg Bites Recipe (12 pieces):
Ingredients
- 11 large eggs
- 2 Tbs milk (or heavy cream for extra richness)
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ½ cup diced ham (or pepperoni/salami for variety)
- 1 small onion (chopped)
- 4 oz cream cheese, softened and cut into small cubes + 2 Tbs of milk
- ½ cup shredded cheese (optional – cheddar or mozzarella are great)
- 1 tablespoon chopped chives or green onions (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or line with silicone baking cups.

- Whisk the eggs in a large bowl with the milk, salt, and pepper until smooth and slightly frothy.
- Add the fillings: Stir cream cheese with milk until smooth, add the diced ham, onion and shredded cheese (if using).

- Add cream cheese: Divide the cream cheese mixture into the center of each cup.
- Fill the muffin cups about ¾ full with the egg mixture. The eggs will puff up around it as they bake, creating a creamy surprise inside.
- Bake for 18–22 minutes, or until the egg bites are set and lightly golden on top. The bites will puff up while baking but settle as they cool.
- Cool slightly before removing from the tin. Garnish with fresh chives or green onions if desired.
- Enjoy warm—or store in an airtight container in the fridge for up to 4 days. Reheat in the microwave for 20–30 seconds.
Tips & Variations
- Spice it up: Add a pinch of chili flakes or a dash of hot sauce.
- Meat swap: Try turkey, bacon, or sausage instead of ham.
- Veggie boost: Stir in chopped spinach, bell peppers, or mushrooms.
- Make it fancy: Serve with a dollop of sour cream or salsa on top.
