Ingredients (makes 28 cookies):
For the cookie dough:
- 1 3/4 cup of All-Purpose Flour
- 6 Tbs of Cocoa Powder
- 1 Tbs of Instant Coffee
- 1 cup of Butter, softened
- 3/4 cup of Powdered Sugar
- pinch of Salt
For the Glaze:
- 2 cups Powdered Sugar
- 2 Tbs Milk (or as needed to create a glaze)
Materials:
- Mixing Bowl
- Electric mixer
- 2 Baking sheets
- Rolling pin with spacer
- Snowflake-shaped cookie cutter (3D)
- Cooling wire rack
Instructions:
- Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a handheld electric mixer.
- In a separate bowl, whisk together the flour, cocoa powder, instant coffee, and salt. Gradually add the dry ingredients to the wet ingredients.
- Mix together until a soft dough forms, divide in half and refrigerate for 15 min.
- Roll and Cut: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Roll out one half of dough between two parchment papers into about 1/4-inch thickness using a rolling pin with a spacer (for even thickness of the dough).
- Use a floured 3D snowflake-shaped cookie cutter (to prevent sticking) and cut out the cookies.
- Place them on the lined baking sheets, leaving some space between each.
- Bake: Bake the cookies for 12-14 minutes or until the edges are set. Allow them to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Prepare the Glaze: In a mixing bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more powdered sugar or milk if necessary.
- Glaze the Cookies: Once the cookies are completely cooled, use a spoon to carefully fill the snowflake indentations with the glaze. Allow the glaze to set before serving.
