Ingredients (makes 28 cookies):

  • 1 3/4 cup of All-Purpose Flour
  • 6 Tbs of Cocoa Powder
  • 1 Tbs of Instant Coffee
  • 1 cup of Butter, softened
  • 3/4 cup of Powdered Sugar
  • pinch of Salt

For the Glaze:

  • 2 cups Powdered Sugar
  • 2 Tbs Milk (or as needed to create a glaze)

Materials:

  • Mixing Bowl
  • Electric mixer
  • 2 Baking sheets
  • Rolling pin with spacer
  • Snowflake-shaped cookie cutter (3D)
  • Cooling wire rack

Instructions:

  • Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a handheld electric mixer.
  • In a separate bowl, whisk together the flour, cocoa powder, instant coffee, and salt. Gradually add the dry ingredients to the wet ingredients.

  • Mix together until a soft dough forms, divide in half and refrigerate for 15 min.

  • Roll and Cut: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Roll out one half of dough between two parchment papers into about 1/4-inch thickness using a rolling pin with a spacer (for even thickness of the dough).

  • Place them on the lined baking sheets, leaving some space between each.

  • Bake: Bake the cookies for 12-14 minutes or until the edges are set. Allow them to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Prepare the Glaze: In a mixing bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more powdered sugar or milk if necessary.
