Ingredients

  • 2 lb. beef stew meat, cut into large chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped

Instructions

  1. Brown the beef:
    Heat olive oil in a large Dutch oven over medium-high heat. Brown beef in batches until well seared on all sides. Remove and set aside.
  2. Sauté aromatics:
    Reduce heat to medium. Add onion to the pot and cook until softened, about 5 minutes. Stir in garlic and cook for 30 seconds.
  3. Build the base:
    Stir in tomato paste and cook for 1 minute. Add smoked paprika, thyme, salt, and pepper.
  4. Simmer the stew:
    Return beef to the pot. Add carrots, parsnips, potatoes, bay leaf, and beef broth. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1½–2 hours, until beef is tender.
  5. Finish & serve:
    Remove bay leaf. Taste and adjust seasoning. Garnish with fresh parsley and serve hot.
