Recipe: Berry and Cream Cheese Filled Egg Bites (12 pieces)
Ingredients:
- 10 eggs
- 4 oz cream cheese (½ block)
- ¼ cup milk (divided)
- Zest from 1 lemon
- 4 Tbsp Stevia
- 1 tsp vanilla extract
- 2 Tbsp each dried raisins, cherries, or currants (optional)
- 2 Tbsp each chopped nuts (walnuts or almonds, optional)
- Berries (fresh or frozen)
- Non-stick cooking spray

Instructions:
- Heat oven to 375°F (190°C) and spray a muffin pan with non-stick spray.
- In a bowl, mix cream cheese with 2 Tbsp milk until smooth. Stir in lemon zest, Stevia, vanilla extract, and dried fruit/nuts if using.
- Divide the cream cheese mixture evenly into 12 muffin cups. Add a few berries on top.
- Whisk eggs with the remaining 2 Tbsp milk, then pour over the cream cheese and berries.
- Bake for 20–25 minutes, or until golden brown. The bites will puff up while baking but settle as they cool.
