Cranberry Goat Cheese Crostini

If you’re looking for a festive appetizer that’s effortless yet stunning, these Cranberry Goat Cheese Crostini are guaranteed to impress. Crispy toasted baguette slices are topped with creamy goat cheese, a spoonful of sweet-tart cranberry sauce, a sprinkle of crunchy pistachios, and fresh thyme. Ingredients (makes about 20 crostini)
- 1 baguette, sliced into ½-inch pieces
- 2–3 tablespoons olive oil
- 8 oz creamy goat cheese (room temperature)
- 1 cup cranberry sauce (try my very good homemade recipe)
- ⅓ cup pistachios, roughly chopped
- Fresh thyme leaves
- Salt & pepper to taste
Instructions
1. Toast the Crostini
- Preheat your oven to 400°F (200°C).
- Arrange 1/4 inch baguette slices on a baking sheet and brush lightly with olive oil.
- Bake for 7–9 minutes, or until golden and crisp around the edges. Let cool slightly, transfer on wire cooling rack.
2. Assemble
- Spread each toasted slice generously with goat cheese.
- Add a spoonful of cranberry sauce over the cheese.
- Sprinkle with chopped pistachios.
- Finish with fresh thyme leaves, a tiny pinch of salt, and freshly cracked pepper.
