Does It Taste Like Beer?

Nope! The Guinness doesn’t make it taste like you’re drinking a beer. Instead, it adds:

  • Subtle malty depth
  • A slight roasted note
  • Beautiful color
  • Rich complexity

It enhances the cheddar instead of overpowering it.

Ingredients

  • 4 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 1 cup Guinness stout
  • 3 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • 2 teaspoons Dijon mustard
  • 2 ½ cups sharp cheddar cheese, freshly shredded
  • Salt and black pepper to taste
  • Pinch of smoked paprika (optional but wonderful)

Optional toppings:

  • Extra shredded cheddar
  • Crumbled cooked bacon
  • Chopped chives

Instructions

1. Sauté the Aromatics

In a large pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent (about 5 minutes). Stir in the garlic and cook for 30 seconds.

2. Make the Roux

Sprinkle the flour over the onions and stir constantly for 1–2 minutes to cook out the raw flour taste.

3. Add the Guinness

Slowly pour in the Guinness while whisking. Let it simmer for 2–3 minutes to reduce slightly and deepen the flavor.

4. Add Broth & Simmer

Gradually whisk in the broth. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally, until slightly thickened.

5. Stir in Cream & Mustard

Add the heavy cream and Dijon mustard. Stir to combine.

6. Add the Cheese

Lower the heat. Gradually stir in the shredded cheddar, one handful at a time, until fully melted and smooth. Do not boil once the cheese is added.

7. Season & Serve

Taste and adjust with salt, pepper, and smoked paprika. Serve hot with your favorite toppings.

Tips for Perfect Cheddar Soup

  • Always shred your own cheese (pre-shredded doesn’t melt as smoothly).
  • Keep the heat low when adding cheese to prevent curdling.
  • If the soup gets too thick, add a splash of warm broth.
  • If it’s too thin, simmer gently a bit longer.

Storage
