- 1 garlic clove, minced
- ¼ tsp salt
- ⅛ tsp pepper
- 1 – 2 tbs cranberry sauce (optional – for extra sweetness – use my homemade recipe)

1. Preheat the Oven
Preheat your oven to 375°F (190°C).
Grease a baking dish or line it with parchment.
2. Prepare the Filling
In a medium bowl, combine:
- Cream cheese
- Chopped dried cranberries
- Parsley
- Thyme
- Rosemary
- Minced garlic
- Salt & pepper
Mix until well blended and creamy using an electric mixer.
Taste and adjust seasoning if needed.
3. Prepare the Chicken Breasts
- Place a chicken breast flat on a cutting board.
- Use a sharp knife to make a slit along the side — creating a pocket, without cutting all the way through.
- Repeat with all four breasts.
- Pat dry and season both sides with salt, pepper, garlic powder, onion powder, and paprika.
4. Stuff the Chicken
Spoon a generous amount of herb & cranberry filling into each pocket.
Press gently to close (if needed, secure with toothpicks).
5. Sear the Chicken (Optional but adds flavor!)
Heat olive oil in a large skillet over medium-high heat.
Sear chicken 2 minutes per side until lightly golden.
Transfer to baking dish.
(If skipping searing, just place seasoned, stuffed chicken directly into the baking dish.)
6. Bake
Bake for 22–28 minutes, or until internal temperature reaches 165°F (74°C).
Let rest 5 minutes before slicing so the filling sets.
