Ingredients (Basic Crepes)

  • 1 cup all-purpose flour (125 g)
  • 2 large eggs
  • 1 1/4 cups milk (300 ml)
  • 1 tbsp melted butter (15 g)
  • 1 tbsp granulated sugar (12 g) – optional for sweet crepes
  • 1/4 tsp salt
  • extra butter or oil for the pan

Instructions

1. Make the batter

In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar (if using), and salt until smooth.

For best texture, let the batter rest for 15–20 minutes. This helps the flour fully hydrate and creates more tender crepes.

2. Heat the pan

Heat a nonstick skillet over medium heat. Lightly grease with butter or oil.

3. Cook the crepes

Pour about 1/4 cup (60 ml) batter into the pan, swirling immediately to create a thin layer.

Cook for about 1–2 minutes until the edges begin to lift and the bottom is lightly golden.

Flip carefully and cook another 30–60 seconds.

Transfer to a plate and repeat with remaining batter.

Stack cooked crepes on top of each other to keep them soft.

Tips for perfect crepes

• Batter should be thin, similar to heavy cream
• Swirl pan quickly so crepes stay thin
• Adjust heat if crepes brown too fast
• First crepe is often a test – this is normal

    I made this recipe savory without the sugar – cream cheese, smoked salmon, red onion and capers… OMG! It was amazing! The crepes have a great texture and hold the filling nicely 👍

    This Crepes recipe is absolutely delicious! The recipe sounded interesting, so I made it this morning for breakfast. I filled the crepes with peanut butter and banana slices, and with Nutella and banana slices. My husband loved it and so did I.
