Ingredients
Base:
- 1 large bag of tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños (optional, for heat)
- 1/4 cup chopped green onions
- Sour cream, guacamole, or salsa for topping
Beef Option:
- 1 lb. ground beef
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper, to taste
Chicken Option:
- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce or buffalo sauce
- 1/2 tsp smoked paprika
Vegetarian Option:
- 1 can black beans, drained and rinsed
- 1/2 cup corn kernels
- 1 tsp cumin
- 1/2 tsp chili powder
Instructions 🥳
- Prepare the protein:
- Beef: Brown the ground beef in a skillet over medium heat. Add chili powder, paprika, garlic, salt, and pepper. Cook until fully browned.
- Chicken: Toss shredded chicken with BBQ or buffalo sauce and smoked paprika.
- Vegetarian: Sauté black beans and corn with cumin and chili powder for 3–4 minutes.
- Assemble the nachos:
- Preheat oven to 375°F (190°C).
- Spread tortilla chips on a large baking sheet or oven-safe platter.
- Evenly layer your protein choice (beef, chicken, or veggies) over the chips.
- Sprinkle shredded cheddar and Monterey Jack cheese on top.
- Bake:
- Bake in the preheated oven for 8–10 minutes, or until cheese is melted and bubbly.
- Add toppings & serve:
- Remove from oven and top with diced tomatoes, sliced jalapeños, and green onions.
- Serve warm with sour cream, guacamole, or salsa on the side.
