Nothing says “game day” like a big plate of loaded nachos! Crispy tortilla chips piled high with gooey melted cheese, savory toppings, and a little bit of spice—these nachos are easy to share and impossible to resist. You can make them classic with beef, zesty with chicken, or fully vegetarian—there’s a plate for every fan in the room!

Ingredients

Base:

  • 1 large bag of tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños (optional, for heat)
  • 1/4 cup chopped green onions
  • Sour cream, guacamole, or salsa for topping

Beef Option:

  • 1 lb. ground beef
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper, to taste

Chicken Option:

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce or buffalo sauce
  • 1/2 tsp smoked paprika

Vegetarian Option:

  • 1 can black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 tsp cumin
  • 1/2 tsp chili powder

Instructions 🥳

  1. Prepare the protein:
    • Beef: Brown the ground beef in a skillet over medium heat. Add chili powder, paprika, garlic, salt, and pepper. Cook until fully browned.
    • Chicken: Toss shredded chicken with BBQ or buffalo sauce and smoked paprika.
    • Vegetarian: Sauté black beans and corn with cumin and chili powder for 3–4 minutes.
  2. Assemble the nachos:
    • Preheat oven to 375°F (190°C).
    • Spread tortilla chips on a large baking sheet or oven-safe platter.
    • Evenly layer your protein choice (beef, chicken, or veggies) over the chips.
    • Sprinkle shredded cheddar and Monterey Jack cheese on top.
  3. Bake:
    • Bake in the preheated oven for 8–10 minutes, or until cheese is melted and bubbly.
  4. Add toppings & serve:
    • Remove from oven and top with diced tomatoes, sliced jalapeños, and green onions.
    • Serve warm with sour cream, guacamole, or salsa on the side.
