Ingredients (12 pieces)
- 1/3 lb. chorizo sausage, browned
- 1 Tbsp oil
- 10 eggs
- 1/4 cup milk
- 1/4 green bell pepper, chopped
- 1/4 red bell pepper, chopped
- 1/4 large onion, chopped
- Salt and pepper (to taste)
- Shredded cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Brown the chorizo in oil.
- Chop the peppers and onion.

- Whisk the eggs with milk.
- Grease a muffin pan and divide the cooked sausage and vegetables evenly into the muffin cups.
- Pour the egg mixture over top.

- Bake for 20 minutes. The bites will puff up while baking but settle as they cool.

- Sprinkle with cheese (if using) and return to oven for 3 minutes until cheese is melted.
