  • 11 large eggs
  • 2 Tbs milk (or heavy cream for extra richness)

  • ¼ teaspoon black pepper
  • ½ cup diced ham (or pepperoni/salami for variety)
  • 1 small onion (chopped)
  • 4 oz cream cheese, softened and cut into small cubes + 2 Tbs of milk
  • ½ cup shredded cheese (optional – cheddar or mozzarella are great)
  • 1 tablespoon chopped chives or green onions (optional, for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or line with silicone baking cups.
